My Christmas Menus

My favorite month of the year is flying by!  I can’t believe I am finding myself brainstorming and planning my Christmas Eve and Christmas morning meals already.  Wasn’t it just Thanksgiving?  So here I’ve rounded up a few recipes that I will making over the holiday for my family.

CHRISTMAS EVE

Our festivities are slightly altered this year, so Christmas Eve will look a little different.  After talking it over with J, we decided to take on a standing rib roast for dinner (ie- a seasoned prime rib from a local butcher).  I’ve prepared this cut in the past and it turns out ridiculously good.  My plan is to roast the meat slowly in the oven following this method.

I’m also going to make a savory corn and potato chowder as an appetizer using this process by The Recipe Rebel.  I know we will all be hungry after church, and this hearty soup will hold us over until the meat is ready to be carved.

A simple mozzarella and tomato wreath similar to this one will add a festive touch to the buffet.

For the kids (and adults too), I’m forgoing my super fast mac and cheese dish and trying a more decadent version from Sugar Spun Run.  It’s Christmas Eve, after all.

With all of this rich food on the menu, a simple green salad will be tossed to round out the meal.

For dessert, to go along with the homemade cookies, I am trying this Brown Butter Cinnamon Ice Cream recipe by Food52 using our new ice cream maker.  I have read that it is to die for!  We plan to test it out next weekend just to make sure it’s good, but how can it not be?

CHRISTMAS MORNING

This year we have the kids when we wake up on Christmas morning, so I always like to have something special to fill their bellies after opening Santa’s gifts.  For years I’ve done make-ahead casseroles which work perfectly for this occasion.

Besides mimosas of course, I’ll be making this Cornflake Potato Casserole which was an unwavering request from my daughter.  I don’t mind though because quite frankly, it’s a hit every time I make it.  This dish is the perfect combination of comforting potatoes and cheese with a buttery crunch. It involves minimal preparation and can be assembled the day before.

In addition, nothing beats an overnight french toast dish.  The eggs soaked into the bread make it super delicious and easy to prepare.  Now how bad can a recipe from Joanna Gaines be?  This year we are going to give her version a whirl.  The topping especially looks and sounds extra amazing!

BONUS RECIPE!

Another recipe I stumbled upon that will definitely made over the holidays is this Chocolate Croissant Bread Pudding by Bread Booze Bacon.  I mean, how decadent does this dessert sound?
